How to make…a Pornstar Frosé cocktail

Still in lockdown, summer is getting sweaty and I can’t cool down in my usual style: frozen cocktail, outside terrace, rooftop bar. Unless I do it myself, of course. Grab your blender and join me as I learn how to make cocktails while the bars are closed. Next: the Pornstar Frosé cocktail.

We’re making porn???!!!

Hell no! Pornstar, as in martini, as in the Hen Do favourite vanilla, vodka and passion fruit cocktail with a side of bubbles. Then cross it with a Frosé, a frozen slushie for the adults made with rosé wine. With me so far? Pornstar martinis are about as classy as they sound (but such delicious guilty pleasure) and as for Frosés, I first discovered these about 3 years ago on a sweltering bank holiday staycation at The Ned where so many people were laying by the rooftop pool, you could no longer see where the oiled-up bodies ended and the sunbeds began (definitely pre-social distancing). Frosés were a saving grace in the 30+ degree heat. Seriously.

Now I look out for them everywhere I go that has sunshine – shout-out to Frosé Friday at The Rosé Social in Seminyak, Bali (gutted I had to move on to Ubud, so wasn’t there on a Friday to check it out).

So this is another mash-up cocktail?

Yes, but not my Frankenstein. I have to credit Bar Chick for the recipe, I just adapted it. The flavours of the ‘Pornstar’ blend so well with the rosé and together, they just scream summer. Though I’ve been more familiar with Frosés flavoured with a touch of strawberry, the switch up to passion fruit is a smart one. The original recipe did call for passion fruit juice, but as I could get hold of fresh fruits so I used these instead (more on that later…).

But can I make this cocktail at home?

Of course. It’s really easy to whizz up a batch of Pornstar Frosés to enjoy sat in your garden, on your balcony…or by an open window (what I wouldn’t do for outside space!). You will need to do a little prep, though. You’ll need an ice cube tray and a freezer to freeze the rosé wine overnight, so check the weather forecast and plan ahead (or just keep a tray of rosé cubes in the freezer in case of emergency sunshine). Once again, you’ll need a good blender that can handle ice. Otherwise, everything else should be kitchen standard issue.

Cocktail ingredients

  • 1 large glass of rosé (approx 250ml)
  • 35ml Aperol
  • 25ml vodka
  • Flesh from 1 1/2 passion fruit (OR 75ml passion fruit juice…)
  • Splash agave syrup
  • 1/2 passion fruit and 50ml bubbles (I used prosecco) to serve

How to make a Pornstar Frosé

Pour the rosé wine into an ice cube tray and freeze overnight.

When ready to prepare, measure the Aperol, vodka, passion fruit flesh/juice and agave into a blender. Add the frozen rosé cubes and blend. Though ‘fresh’ from the freezer, I found my rosé cubes to be already quite ‘slushie’ even before adding to the liquid in the blender, so I dropped in a few standard ice cubes to help me get the more frozen slush consistency I was after.

To serve, pour into a glass. I have a very limited selection of cocktail glasses at home (i.e. none), so I used a large wine glass, though strictly either a coupe or martini would be correct. Garnish with a passion fruit half and shot glass of Prosecco. Because we so fancy.

First, let me nit-pick. @Diva, if the recipe calls for passion fruit JUICE. Use passion fruit JUICE not fresh fruit FLESH. There’s a reason, and that reason is SEEDS. Put them in a blender and they just grind down to grit. Not a good look. Remade with juice – smooth as a Mr Whippy.

Bottom line, though, this drink is summer in a glass. And not just hot day in the garden summer, it’s a trashy-sexy beach club in Marbella. It’s playful, very pretty and oh so extra (does it need the side of bubbles? Noooo. But it’s doing it anyway). And it’s delicious. A little sweet, but not sickly (was it because I used agave rather than sugar syrup?).

Most of all, on a hot summer day, it’ll chill you out while you…er, chill.
